This time last week, I was in Reykjavik, Iceland. I thought it was cool because it was August and I was wearing a winter coat and a scarf, and I was wishing I had a pair of gloves. I did that for a day, and that was enough. So while everyone is complaining about this super-hot heat, I’m just over here catching a tan and being grateful I don’t live in Iceland, even though it is an awesome place to spend a few days every once in a while (my city guide is coming soon).
When the weather is like this, the last thing people want to make is a big to-do in the kitchen, so here are eight of my recipes which are heatwave approved. And because it’s been a while since I included a song:
– This Super Easy Cod Ceviche, made ‘French Style’ with shallot + a touch of dijon.
– This Burrata Caprese with garlic + shallot confit. All you need is a toaster oven.
